Healthy Anzac biscuits- This recipe is a favourite of mine and just in time for Anzac day this year. These biscuits are dairy, wheat and sugar free!!
Ingredients:
1 cup almond meal
1 cup oats
1 cup shredded coconut
¼ cup honey
1/8 cup of coconut sugar(or add a little extra honey or agave)
¼ cup coconut oil
½ tsp baking powder
1 tablespoon water
Method:
1- Mix together almond meal, oats, coconut and coconut sugar (if you have it)
2- Combine and heat the honey and coconut oil (I placed in a warm oven for a few minutes)
3- Mix the baking soda and water together and pour into the honey and coconut mixture
4- Pour liquid over the dry ingredients and mix well
5- Cover and keep in the fridge until the mixture hardens
6- Once hardened, use an ice-cream scoop or spoon to make 15-20 cookie dough balls
7- Place onto a baking tray on baking paper and squash the balls with the palm of your hand to flatten
9- Pop into the oven and bake for 20-25 mins
