Are raw cocao nibs the new superfood?
Cocao nibs are bits of fermented, dried, roasted and crushed cocao beans. You can buy them from health food stores and while they have an intense chocolate taste they are quite bitter and not sweet.
However, they are a great addition to your diet. I add cocoa nibs to my power breakfast smoothies for a delicious mild chocolate flavour. You can also add them to muesli, cereals, yoghurts, and into a raw nut mix. Here is my recipe for Almond and Cocao balls that you may like to try.
Almond and Cocao Delights Recipe
Ingredients
½ cup almonds, finely ground
¼ cup walnuts, finely chopped
¼ nut spread (any will do)
2 tablespoons agave syrup
2 tablespoons finely ground cocao nibs
½ tsp vanilla essence
¼ cup desiccated coconut
Method
Add all ingredients together except for coconut. Mix well. Place coconut onto a plate. Using a teaspoon at a time, roll the mixture into a small ball and coat with coconut. Place onto a plate and serve.
Will keep in the fridge for up to 7 days and makes 18 balls in total. Enjoy and if you have any other recipes using cocao nibs, please let me know in the comments!
